I started this new journey four weeks ago tomorrow, using the Weight Watchers plan. This week has been a bit harder but I've still tracked everything that goes in my mouth and I haven't used ALL of my indulgence points though I've dipped into them. Tomorrow is my weigh in. Hopefully I'm still on the losing side. I decided to start this blog because I wanted to share my ideas about food and the creations I've come up.
The other night I had plain ole chicken breasts. They can be pretty boring. I get tired of looking for recipes and, honestly, I usually don't have the ingredients I need for any particular recipe. That particular night I was just cooking for myself. I had no one else to please. I looked around the kitchen and saw a small onion. I peeled it, and I cut in half and sliced it. I sprayed a small skillet with cooking spray and threw in the onion slices. I then started cutting the chicken into bite size pieces. As I did so, I looked around the kitchen again and spied some apples. After I finished the chicken, and it was cooking with the onions, I chopped the apple and then ran out to the herb garden for some fresh sage which I minced and threw in. I added salt, fresh ground pepper and some chicken broth. When the chicken broth had cooked down and the chicken was cooked through, it was done! Yummy yummy yummy!!! And I figured it to be 3 points. I did share some with my son who asked for it again the next night when I made enough for my husband who liked it as well.
